Maddy’s Orange Drizzle Cakes…

Maddy is our middle daughter and has baked cakes since she was a tiny girl. She makes the most delicious orange drizzle cake and uses the recipe from the famous East Lambrook Manor Gardens here in Somerset - in years gone by the gardens had a multi award winning tea shop and won South West Tea Room of the Year, and this recipe is directly from their archives…. see recipe below.

Ingredients:

8oz/225g butter

8oz/225g caster sugar

8oz/225g self raising flour

4 eggs

Graded rind of 3 small oranges

1.5 fl oz/40ml milk

For the drizzle:

Juice of 3 oranges

6oz/170g caster sugar

Instructions:

Cream the butter and sugar together in a large bowl until pale and fluffy.

Add the eggs a little at a time (it is important not to put too much egg in the mixture at once to prevent the mixture from curdling).

Mix thoroughly.

Stir in orange rind and then fold the in the flour and then the milk.

Pour the mixture into a greased and lined small rectangular loaf tin and bake.

Bake in a pre-heated over at 160C for 30-40 minutes.

Whilst the cake is cooking, put the orange juice and sugar into a pan and bring to the boil.

As soon as the cake comes out of the oven puncture the top with a small skewer or similar and make approximately 10 holes in the cake.

Pour over the mixture so that it soaks all over the cake and especially into the holes.
